Sometimes chocolate does make us feel better!!!
Ingredients
- ¾ cups All Purpose Flour (sifted)
- 2/3 cup cocoa powder (sifted)
- 1 ½ baking powder
- Pinch of salt
- 1 cup light brown sugar
- 1/3 cup Ariston Chocolate Infused Olive oil
- 1 large egg
- ½ cup strong coffee
- 1 tsp. vanilla extract
- 1 tbsp Kahlua
Mascarpone Frosting
- 2 tbsp. icing sugar
- 3 tbsp. cocoa powder (sifted)
- 2 tbsp milk
- ½ cup Mascarpone cheese
- 190 grams chopped dark chocolate 50%
- 1 tbsp Kahlua
*Optional stir in some Ariston Orange and Whisky Marmalade for a decadent twist!!!
Directions
Preheat oven to 350o F. Line your muffin tin.
Mix to combine the first five ingredients (dry ingredients) in a bowl and mix well. Add in your wet ingredients and mix just until combined (do not overmix).
Bake for 20-22 minutes. Let the cupcakes cool completely before frosting them.
