Ariston Chocolate Cupcakes

Sometimes chocolate does make us feel better!!!

Ingredients

  • ¾ cups All Purpose Flour (sifted)
  • 2/3 cup cocoa powder (sifted)
  • 1 ½ baking powder
  • Pinch of salt
  • 1 cup light brown sugar
  • 1/3 cup Ariston Chocolate Infused Olive oil
  • 1 large egg
  • ½ cup strong coffee
  • 1 tsp. vanilla extract
  • 1 tbsp Kahlua

Mascarpone Frosting

  • 2 tbsp. icing sugar
  • 3 tbsp. cocoa powder (sifted)
  • 2 tbsp milk
  • ½ cup Mascarpone cheese
  • 190 grams chopped dark chocolate 50%
  • 1 tbsp Kahlua

*Optional stir in some Ariston Orange and Whisky Marmalade for a decadent twist!!!

Directions

Preheat oven to 350o F. Line your muffin tin.
Mix to combine the first five ingredients (dry ingredients) in a bowl and mix well. Add in your wet ingredients and mix just until combined (do not overmix).
Bake for 20-22 minutes. Let the cupcakes cool completely before frosting them.
