Pesto and Balsamic Pasta Night!

  • 4 tbsp Ariston Pesto Infused olive oil
  • 3 cloves garlic, minced (or a splash of Ariston Garlic Infused olive oil!)
  • 3 zucchinis, sliced
  • 2 lb cherry or grape tomatoes
  • 1 lemon, zested and juiced
  • 2 tbsp Ariston White balsamic vinegar
  •  1 lb pasta of choice, cooked
  • 1⁄4 cup fresh basil, chopped
  • 1 parmesan cheese, shredded, for serving
  • 1 pine nuts, toasted, for serving


Heat olive oil and garlic in a saucepan over medium high heat. Cook for 1 minute, then add zucchini and tomatoes. Cook for 10 minutes or until the tomatoes start to burst and the zucchini is browned in spots. Add lemon juice, lemon zest, and white balsamic vinegar and cook for 2-3 minutes. Stir in pasta until combined and well coated. Garnish with basil, parmesan, and pine nuts.
